Tomme manufactured only in our Fruitière (1913) at the foot of the Pointe de Miribel. The piece weighs about 0.700 kg to 1 kg.
Additional information: This delicious cheese comes from the raw milk of the producers of the cooperative of Bogève, which are located less than 5 km from the Fruitière. Its dough is soft and airy like the tommes of the past.
The name "Charlotte" comes from our local patois nickname given for 4 generations. We manufacture tomme all year round.
It can be enjoyed after maturing for 2 to 3 months. Contrary to what might suggest its hard and rough crust and its smell of cellar, mold, its taste is soft, tender and delicate. It will be appreciated by everyone, including children.
Appearance: Thick crust, rough brown in colour, flowered with white and yellow patches.
Slightly sticky paste, soft ivory to yellow in colour, dotted with small holes.
